My Latest healthy food kicks - Part 1

Okay,
So I haven't been updating my blog for a few months. But I'm still trying to eat healthy.
I have a few easy and healthy recipes you can make. Here you go:

Tofu omelette delight
- 1 cup crumbbled tofu (firm tofu)
- 1/2 cup chopped onion
- 1/2 cup egg subtitute
- 1/4 cup cheese (optional)
- 1 table spoon of olive oil
- 1 clove garlic (chopped)
- salt and pepper to taste
Sauteed onion, garlic and tofu, add salt and pepper.
Add egg subtitute, cook  it in medium heat for 2 minutes
Add cheese, fold the omelette.
Serve 2


Spicy Spinach Ramen Noodle
- 1 spicey ramen noodle
- 2 cups spinach
- 1 tabblespoon sweet soy sauce
- 1/4 tsp cayene pepper
- 2 cloves garlic (chopped)
- 1/4 cup shopped shallots
Cook noodle as directed in the package, drained.
Sauteed shallots, garlic and spinach.
Add coocked noodle, cayene peper, sweet soy sauce, coocked noodle and seasoning from ramen paket. mix it well. Serve 2

Exercise - Fitness

In conjunction to live healthier, I'm going back to exercise. 
Yes, exercise!
I love dancing, so I'm going to do Zumba twice a week (Tuesday and Thursday) from 8.45 - 9.45 am or 7:00 - 8:00 pm depending on my appointment schedules.
In addition to that,  I'm going back to do 3 days boot camp (Monday-Wednesday-Friday) which is from 5:30 - 6:30 am in Stoval Park. Yes it's outdoors. Still a little cold in the morning but I'm determined to do it.

So here is my weekly work out schedule:

Monday - upper body emphasis 
Tuesday - Zumba
Wednesday - cardio and core CRAZE! 
Thursday - Zumba
Friday - lower body emphasis 

With exercise and eating well I'm sure the pounds will be shed (at least I'm hoping) because I'm doing it right.
Forget about dieting. Just eat well, go out there and exercise!

Weekly menu

After a week posting what I think is healthy choice of food, I will post weekly healthy menu from Monday to Friday. The weekend is reserve to eat anything I like but in moderation.
I substitute some of the ingredients to healthier ingredients such as using eggs white, 1% milk, whole wheat flour, whole wheat bread, ground turkey, etc.
Also, I use all kind of fruits and vegetables for the juice (carrots, broccoli, spinach, apple, orange, pineapple, berries, etc.).  Although I like most of the juice I’ve made, my favorites are carrots ginger and beets ginger juice.

MONDAY
·         Breakfast:
-          Fresh juice (fruit & vegetables)
-          Whole wheat toast or bagel
-          Coffee
·         Lunch:
-          Tamarind vegetable soup
-          1 cup of rice
-          2 oz. Beef brisket
·         Dinner:
-          Turkey meatloaf
-          1 cup of corn

TUESDAY
·         Breakfast:
-          Fresh juice (fruit & vegetables)
-          Whole wheat toast or bagel
-          Coffee
·         Lunch:
-          Grilled chicken vegetables soup
-          1 cup of brown rice
·         Dinner:
-          Turkey meatballs
-          Green beans

WEDNESDAY
·         Breakfast:
-          Fresh juice apple juice
-          Apple pancake ( I used the apple pulp from the juice)
-          Coffee
·         Lunch:
-          Fried rice: brown rice, turkey meat, corn, diced carrot, egg white
-          Shredded lettuce
·         Dinner:
-          Turkey meatball
-          Wheat spaghetti
-          Green beans

THURSDAY
·         Breakfast:
-          Toasted bagel
-          Fresh juice
-          Coffee
·         Lunch:
-          Salad: lettuce, diced turkey, cheese, toasted almonds with vinegeraite  dressing
·         Dinner:
-          Grilled chicken Breast
-          Corn and green beans


FRIDAY
·         Breakfast:
-          Fresh juice
-          Honey nut Cherrios cereal
-          Coffee
·         Lunch:
-          Salad: lettuce, grilled chicken, toasted almonds with vinegeraite dressing
·         Dinner:
-          Roasted chicken
-          Corn and green beans

Good place to hang out in Downtown Forth Worth

I love downtown Fort Worth. It's save and parking in free on the weekend and evenings. You can see police officers patrolling the area in horses or bicycle.
8.0 Restaurant and Bar is conveniently located in the heart of Sundance Square.
When the weather is good, you can sit in the patio and enjoy the people passing by or live music on the weekend. The food is not bad either.

Eating healthier in 2011 - day 8

My girlfriend invited me for lunch at her house today.  She prepared Indonesian food. Everything is good. I was good on limiting my food intake.
·         Breakfast:
-          Beets and ginger juice
-          ½ toasted bagel
-          Coffee
·         Lunch:
-          Tamarind vegetable soup
-          1 cup steamed rice
-          Salted fish
-          Beef curry
·         Dinner:
-          Fresh Apple juice
-          Toasted whole wheat bread with butter

Eating healthier in 2011 - day 7

Although there are temptation out there when trying to be good (ie, eating healthier), I’m not going to give up and will keep on trying.
So today, my husband and I went to check out “Super Bowl XLV” activities. We ended up having lunch in downtown Fort Worth while watching people passing by.
We sit in the patio at  8.0 Restaurant 


I had Honey-Dipped Chicken with mashed potato w/ mild jalapeno cream gravy and steamed broccoli. I was really good and ate only a spoonful of the potato (yes, I pat my own back).
·         Breakfast:
-          carrot and apple juice
-          ½ toasted bagel
-          Coffee
·         Lunch:
-          Honey-dipped chicken (yes, it’s fried)
-          Steamed broccoli
·         Dinner:
-          Fresh Apple juice
-          Toasted whole wheat bread with butter

Eating healthier in 2011 - day 6

I had to work all day and only have 1 hour to have lunch in between my appointments. I found Papaya Garden Thai Restaurant and decided to eat there.

Owns by Peter Chan, I would rate this restaurant 2 stars. It was okay. Not to bad and not good either. Service was slow. I ordered Pad Thai with tofu instead of shrimp, it was too sweet for my taste. Tom Yam Gong soup was okay. The menu was extensive and a bit confusing. All and all the food is not authentic, it’s a combination of Thai, Chinese and Japanese food.

So, for day 6th, I had:
·         Breakfast:
-          A cup of carrot/ginger/apple juice
-          Toasted half bagel
-          Coffee+ 2% milk
·         Lunch:
-          1 cup of jasmine rice
-          1 cup of Tom Yam soup
-          1 cup of Pad Thai
·         Dinner:
-          1 cup of papaya salad
-          1 cup of Pad Thai
-          1 2 inches square brownie
I’m working on smaller portions and still trying to eat healthy.
